On the weekends, I tend to sleep in a few extra hours. I usually get up at 7:30 am, but I tend to sleep until around 11:30 am on weekends and days off. I am weight restored and able to rely on my hunger cues now. However, on days where I do not get up early I usually eat about 500 calories less than I would on days I get up at 7:30. Is this okay? I am not restricting and eat when I'm hungry, stop when I'm full.

I think this is quite normal as your body needs less energy when it's sleeping than when being awake! Just make sure you still eat enough (I'd say like 2300 when staying pretty sedentary?)

As an example, it's normal to eat more on a Friday for most people (waking up early, but going to bed later than usual). Saturdays may be shorter days as we tend to go to bed at the same time as on Fridays but wake up much later in the morning. This will make the need for food a bit lower on Saturdays.
